Vegan Sweet Potato Chocolate Mousse Recipe

Looking for a chocolate dessert without the guilt? Here's one you can enjoy throughout the summer!

If you haven't heard of Fullgreen before, they specialise in making healthy, nutritious products. They use non-GMO vegetables to create naturally low calorie and carbohydrate vegetable rices. All of these are free from trans fats, gluten and are allergen free.

After finding The Veggie Daddy's recipe on Instagram, I decided to give it a go using Fullgreen's steamed sweet potato rice. As their sweet potato rice is already steamed, this dessert can be made within minutes! This simple, vegan recipe can be enjoyed with any of your favourite toppings, including chocolate chips, Oreos, roasted nuts or fruit.

You will need a blender for this one.

2 packets of Fullgreen's sweet potato rice
180ml of oat or almond milk
2 tbsp cocoa powder (sifted)
3 tbsp maple or agave syrup
2 tsp vanilla extract

How to make
Place all the ingredients into the blender and blend until smooth.
Pour into a serving bowl or ramekins and chill in the fridge for 1–2 hours.
Decorate with your favourite toppings and enjoy!
