Chocolate Orange Shortbread

💕 Happy Valentines Day everyone! 💕

I decided to do some late night baking, with just me and my oven (how romantic) and make mini heart-shaped shortbread with chocolate orange chunks :)

Whether you're boycotting Valentine's Day or all loved up, you can still make these really easy shortbread biscuits - in any shape you like :)


Recipe
115g of softened unsalted butter
175g of plain flour
50g caster sugar
2 tsp of vanilla essence
10 Terry's Chocolate Orange segments chopped up into small pieces or broken into chunks

How To Make
Cream the butter and sugar until light and fluffy. Add the vanilla essence and flour and mix well. Add in the chocolate pieces and mix again to form a dough.
Roll out the dough to 1cm thickness on to a floured surface and cut using any cookie cutter. Place on a lined baking tray and prick the tops with a fork before placing it in the fridge for 30 minutes.
Preheat the oven to Gas Mark 4 / 180 degrees and bake for 15-18 minutes until a pale brown.
Let the shortbread cool for 5 minutes before transferring them to a cooling rack.

Tips
Be careful not to leave the chocolate in pieces that are too big as they break up the mixture and can become burnt whilst cooking.
Preheat the oven 10 minutes before the chilling time is up.
