Dairy-free Blueberry Cupcakes
Good morning everyone!
Today I decided to get up early and bake some blueberry cupcakes for my mum using this simple recipe from All Recipes UK but changing it so no dairy is used :)
250g plain flour
200g caster sugar
125ml almond milk
110g sunflower/dairy-free butter
2 tsp of baking powder
½ tsp of salt
How To Make
Set your oven to Gas Mark 4 / 180 degrees and place 22 cake cases in a muffin tin.
Sieve the flour, salt and baking powder in a bowl and set aside.
Cream the butter and sugar in another bowl. Add the eggs and beat well. Add the almond milk and flour and beat until combined. Stir in the blueberries and divide mixture into the cake cases.
Bake for 20-35 minutes until golden.
