Triple Chocolate Fairy Cakes

With the amount of desserts I ate during the Christmas holidays, I didn't get a chance to bake as much as I thought I would. 

I baked some triple chocolate fairy cakes with a milk chocolate centre :)
Decorating them was the fun part. I used different types of chocolate (milk, white and dark) and cut them into various shapes. Even though everyone was pretty full from Christmas dinner, these cakes were small enough to tempt them for dessert :)

Recipe (makes 12)
For the cake
100g of caster sugar
100g of butter
100g of self-raising flour
2 eggs (beaten in a separate bowl)
1 tsp of vanilla essence
12 cube sized pieces of chocolate (optional)

Chocolate icing
40g of butter
80g of icing sugar
1 tbsp of cocoa powder 

Decoration
40g of any chocolate you like

How To Make
Set your oven to 180 degrees / gas mark 3. Place 12 cupcake cases into cupcake tray.
Cream the butter and sugar together in a bowl. Add the beaten eggs and vanilla essence. Mix well.
Add the self-raising flour and mix until fully combined.
Pour the mixture evenly into the cupcake cases. If you want a chocolate centre, place a spoonful of the mixture into the cupcake case, then place one cube of chocolate in the middle and then cover with another spoonful of the mixture.
Bake for 10-15minutes or until golden brown and place on a cooling rack.

Whilst the cupcakes are cooling, cream 40g of butter. Sift in ⅓ of the icing sugar and mix well. Sift in the cocoa powder and the rest of the icing sugar gradually and mix well. Spread on to the fairy cakes when cooled.

Decorate the fairy cakes with different coloured chocolate and anything else you wish to use, like any leftover chocolate from Christmas (if you have any) :)
